Tokyo has hundreds of pour-over coffee shops in which a barista will take 15 minutes to make your personalized java.
At Acid Coffee (quite the name for a coffee shop!) this morning, we met barista Aki-san (above).
Aki-san personally tastes every coffee that he makes just before presenting the beverage to a customer — to make sure that the proportion of water to coffee was correct and that the temperature of his pour-over brew, hot or cold, is right.
I found this amazing: he serves his hot, pour-over coffees in Burgundy-shaped, Riedel stemware!

Spent most of the day wandering in a sensational shopping area, Omotesando, capturing life, signs and people….
The architecture in Tokyo tops every other city I’ve seen, or lived in. There are new buildings that appear to be leaning over, ready to collapse.. there are buildings like the one below, in which a full-fledged botanical garden has been etched out of the entire roof corner of a building….
